Vegan Heart of Palm Ceviche

Prep Time 10-15 minutes

Serves 4

Ingredients

  • 1 (20 oz) jar hearts of palm

  • 3 medium tomatoes, cut into small pieces

  • 1 red onion, finely chopped

  • 1 fresh cayenne pepper or 2 jalapeño, deseeded and chopped

  • 1/2 orange bell pepper, cut into small pieces

  • 1/2 green bell pepper, cut into small pieces

  • 1 small cucumbers, finely chopped

  • 1 bunch cilantro, finely chopped

  • 2 avocados

  • juice of 3 limes 

  • 4 tbsp olive oil

  • salt and pepper to taste

Directions

  1. Drain the water from the hearts of palm and chop it into large chunks. Rinse in cold water.

  2. In a medium bowl combine the hearts of palm with the remaining ingredients.

  3. Cover the bowl and place in the fridge for at least 30 minutes before serving.
