Vegan Heart of Palm Ceviche

Serves 4
Ingredients
1 (20 oz) jar hearts of palm
3 medium tomatoes, cut into small pieces
1 red onion, finely chopped
1 fresh cayenne pepper or 2 jalapeño, deseeded and chopped
1/2 orange bell pepper, cut into small pieces
1/2 green bell pepper, cut into small pieces
1 small cucumbers, finely chopped
1 bunch cilantro, finely chopped
2 avocados
juice of 3 limes
4 tbsp olive oil
salt and pepper to taste
Directions
Drain the water from the hearts of palm and chop it into large chunks. Rinse in cold water.
In a medium bowl combine the hearts of palm with the remaining ingredients.
Cover the bowl and place in the fridge for at least 30 minutes before serving.
