What I eat in a day / vegan
Hi guys! Whenever I tell people i'm vegan their first questions always is what do you eat?! Its simple, I eat what makes me the happiest, the healthiest and what I can afford. Whether you're trying to go vegan or just looking for ideas, heres a glimpse into what I eat in day.
Pre-Breakfast
Once I wake up, I drink 30 oz of warm lemon water. 🍋 Drinking lemon water any time of the day is great for your body, but drinking it in the morning is especially beneficial because it helps rehydrate you after a night’s sleep. You’ll also get a dose of energy! Once I added lemon water to my morning ritual, I felt like it helped my body wake up and prepare for breakfast.
Breakfast
My breakfast typically consists of simple meals that are quick and easy to make. I rotate between these 3 meals during the week.
- Tofu scramble with spinach, tomatoes and mushroom.
- Avocado on toast with Trader Joe's Everything but the bagel seasoning sprinkled on it.
- Smoothie Bowl made with bananas, mixed berries, oats, almond butter and a leafy green like spinach or lacinato kale.
I also take B-12 supplements in the morning. This isn’t necessary for everyone, but I highly recommend it!
Lunch
During the week my lunches are usually meal prepped and consist of grains and healthy fats so they can be filling and nutritious. When I do meal prep, i dont like to eat the same thing every day so these are my staples.
- Brown rice with a 3 bean salad made with garbazos, black and cannellini beans, avocado, seasoning, celery, cucumber and tomato with a lemon vinaigrette.
- Baked sweet potato topped with chickpeas, quinoa or mixed veggies.
- Mediterranean Plate: hummus, celery, carrots, olives and pita bread
Pre-Dinner
Before dinner, I usually drink some green tea or warm veggie broth.
Dinner
For dinner, I only eat veggies and sauteed tofu. When I'm having dinner at home, I try to avoid eating any heavy carbs like bread or pasta. Whenever I eat high glycemic carbs before bed, I wake up feeling heavier and super hungry. Most nights I will eat cauliflower fried rice because i love how easy it is to make but if im feeling fancy I'll make some cauli steaks instead.
- Sautéed tofu and veggies
- Cauliflower steaks with tabbouleh salad
- Cauliflower fried rice
Snacks
- Bananas
- Popcorn sprinkled with nutritional yeast
- Pressed by Kind Cherry apple chia bar
