Vegan Lemon berry Cake

If you love tart, super moist cakes as much as me then this recipe is for you!! Anyone that knows me knows that i HATE cakes but this recipe is ~sooo~ moist and gooey it won me over. This recipe is super simple and most of the ingredients you probably already have in your pantry. To be honest, this cake could fool even your non-vegan friends....TRUST ME!

Ingredients


WET

Dry

  • Juice of 1 big lemon
  • 1 tsp vanilla extract
  • 2 tbsp vegan butter
  • ½ cup coconut oil
  • 1 cup of non-dairy milk (i used coconut milk)
  • 1 tbsp cold water
  • frozen berries
  • 2 cups of Flour 
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup brown sugar

 

Instructions

  1. Preheat the oven 345 F
  2. In a bowl, combine all Dry Ingredients.
  3. In a separate bowl, mix in all the Wet Ingredients. Make sure your butter & coconut oil is melted and at room temperature when mixing with the rest of the ingredients.
  4. Combine all the ingredients to a smooth batter.
  5. Pour half of the batter in your pan of choice, sprinkle the frozen berries. Once your berries are in place, pour the rest of the batter on top.  
  6. Bake in the oven for 50 min or until knife comes out clean. 
  7. When ready, let cake cool completely and enjoy! 
* PRO-TIP for baking with frozen fruit: flour you frozen berries before adding them to the batter! The flour absorbs some of the surrounding moisture.
