BBQ Jackfruit Tacos

BBQ  Jackfruit Tacos


Ingredients

  • 1-2 cans of Jackfruit
  • 3 Garlic Cloves
  • 1 Red Onion

liquids

  • 3/4 your favorite BBQ sauce (make sure its vegan
  • 1/2 cup of Veggie Broth
  • 1 tbsp Soy Sauce
  • 3/4 Veggie Broth

Spices

  • 1 tsp Smoked Paprika (regular works as well)
  • 1 tsp Cumin
  • 1-2 tbsp Brown Sugar
  • 1-2 tsp Chili Powder
  • salt + pepper to taste

Optional: dash of liquid smoke

Directions

  1. Drain, rinse and shred the canned jackfruit. Cut off the core.
  2. Heat a pan over medium heat. Add oil of choice, once hot toss in lots of garlic and sliced onions. Cook until fragrant.
  3.  Add jackfruit and veggie broth to pan, let simmer for 10-15 min. Add soy sauce.
  4. In a bowl, mix in all the spices and toss them into simmering jackfruit. Let cook for 2-3 minutes.
  5. Pour BBQ sauce overtop (add a little water to make it more saucy) cook for about 20 minutes. Stir occasionally.
  6. Once ready, remove from heat and enjoy it on buns or as taco “meat”.

Pro Tip: For extra flavor, place jackfruit on baking sheet and broil for 5-6 min.
