Vegan Rhubarb Peach Salsa

Helloo! Todays recipe is sweet, tart, spicy & savory!! This Rhubarb Peach Salsa was inspired by my longing for hot summer days. I love the combination of tart and savory because every bite is a new experience. The first bite hits you with a punch of the tartness from the rhubarb, the sweetness of the strawberry and just a hint of spicy from the jalapeño.

Growing up, rhubarb was not readily available to me because it doesn't grow in Puerto Rico and the first time I tried it was a in an amazing rhubarb-strawberry pie. Ever since, I have been very curious about experimenting with it in more ways than just jam and pie. This salsa is fresh, cooling and beautiful.

Ingredients

  • 1 cup of Rhubarb
  • 2 sticks of celery
  • 2-3 strawberries
  • 1 jalapeño, finely chopped
  • 1/2 bell pepper
  • 1-2 tomato
  • handful of chopped cilantro
  • juice of 1 lemon
  • 1/2 cucumber
  • splash of Apple Cider Vinegar
  • 1 avocado
  • 1 peach 
  • 1-2 scallions
  • salt & pepper to taste

Directions

  1.  In a large bowl, add the finely chopped fruits & veggies
  2. Mix all the ingredients and add the apple cider vinegar, lemon juice and oil
  3. Put your salsa in the fridge and once cool enjoy with your favorite chips or as a salad.

Pro-tip: Not a lover of hot peppers? Cut the top of the jalapeño, take a small spoon and remove the seeds to reduce the spiciness.
