Vegan Rhubarb Peach Salsa
Helloo! Todays recipe is sweet, tart, spicy & savory!! This Rhubarb Peach Salsa was inspired by my longing for hot summer days. I love the combination of tart and savory because every bite is a new experience. The first bite hits you with a punch of the tartness from the rhubarb, the sweetness of the strawberry and just a hint of spicy from the jalapeño.
Growing up, rhubarb was not readily available to me because it doesn't grow in Puerto Rico and the first time I tried it was a in an amazing rhubarb-strawberry pie. Ever since, I have been very curious about experimenting with it in more ways than just jam and pie. This salsa is fresh, cooling and beautiful.
Ingredients
- 1 cup of Rhubarb
- 2 sticks of celery
- 2-3 strawberries
- 1 jalapeño, finely chopped
- 1/2 bell pepper
- 1-2 tomato
- handful of chopped cilantro
- juice of 1 lemon
- 1/2 cucumber
- splash of Apple Cider Vinegar
- 1 avocado
- 1 peach
- 1-2 scallions
- salt & pepper to taste
Directions
- In a large bowl, add the finely chopped fruits & veggies
- Mix all the ingredients and add the apple cider vinegar, lemon juice and oil
- Put your salsa in the fridge and once cool enjoy with your favorite chips or as a salad.
Pro-tip: Not a lover of hot peppers? Cut the top of the jalapeño, take a small spoon and remove the seeds to reduce the spiciness.
