Vegan Cilantro Lime Rice

Hello everyone. I hope yall are staying sane and well-fed during this pandemic times. If you are from a future where we are no longer quarantined….HELLO hope you are healthy and thriving and free to enjoy hugging everyone.

Today we are making, Cilantro Lime Rice or green rice. This recipe is based on a dish my mom used to make me when I was little, called Arroz Provenzal. Full transparency, the original arroz provenzal recipe uses parsley instead of cilantro, and some people like adding parmesan cheese on top. I'm not a huge fan of parsley and adding cheese to rice just doesn't sound like something I want to do.

But if you so desire, experiment away! This version is my favorite, it's super easy, refreshing and making rice with garlic butter will indeed change your LIFE!


Ingredients

  • 2 cups of rice

  • 4-5 cloves of garlic

  • 1 tbs vegan butter

  • 1 tbs olive oil

  • 1 cilantro bunch, finely chopped

  • 3 cups of water

  • juice of 2-3 limes

  • salt & pepper, to taste

  • 1 vegan chicken bouillon cube, optional totally not necessary

Directions

  1. Add the olive oil, butter and garlic to a pan over medium heat. (Make sure not to burn the garlic)

  2. Add the uncooked rice to the pan with the oil-garlic-butter mixture. Sautee the rice in the garlic oil for 2 minutes on low heat to seal it.

  3. Once the rice is fully coated in the garlic oil mixture, add water, vegan bouillon cube (optional), salt and pepper.

  4. Cook for about 20 minutes or until rice is done and fluffy.

  5. Let cool for 5 minutes, add the chopped cilantro and lime juice.
