Vegan Not Chicken Salad

Heres the thing, this is not your average chicken salad! Well it doesnt really have chicken and its also not really a salad. Its deliciously hearty, flavorful and VERY EASY to make. One of my favorite things about this recipe is that you can make it in bulk and its perfect for MEAL PREP!

If you should know anything about me is that IM OBSESSED with chickpeas and eat them almost every day. They are an important source of plant-based protein and contain your entire daily value of dietary fiber. In addition, they are a low glycemic index food and are a powerhouse of vitamins/minerals.

For this recipe, I used brown chickpeas (also known as Desi or Kala Chana) mostly because I had a huge bag of them in my pantry. They are smaller and darker than your average chickpea, they also have a slightly nuttier flavor.

Ingredients

  • 1-2 cans chickpeas (for dry chickpeas, soak 2 cups of dry cheakpeas overnight)
  • 2 finely chopped stalks celery
  • 1-2 shredded carrots
  • ½ chopped red onion
  • 1 clove garlic, minced
  • 1 green onion, finely chopped
  • 3 tbsp Vegan Mayo 
  • 1 ½ tsp spicy mustard (my favorite is the Sir Kensington Spicy Brown Mustard)
  • 1 tsp of Celery Seeds
  • 2 tsp fresh lemon juice
  • ½ tsp of Cayenne Pepper 
  • Salt & Pepper to Taste

Directions

  1. In a large bowl, mash the chickpeas with a fork or potato masher for texture. 
  2. Stir in the shredded carrots, celery, garlic, green onion and chickpeas until combined.
  3. Add the mustard and mayo to the bowl.  Stir in the cayenne pepper, salt, pepper and lemon juice, to taste.
  4. Serve it on a wrap, toast, crackers or enjoy it on its own!
