Double Watermelon Summer Salad
Hey guys!! I have a confession...I'm obsessed with watermelon! I cant help but to eat it almost every day and during the summer its my main food source. For this salad I combine my love of two types of watermelon, crimson sweet and watermelon radish. This salad is so refreshing, bright and beautiful, everyone falls in love every time I serve it. It can be modified depending on your taste but trust me mixing the sweet taste of watermelon with the bitter bite of arugula is really delicious.
Watermelon radish is from the heirloom variety of daikon radish and originated in China. This type of radish is a new ingredient to me and the first time I chopped into it was love at first sight! Unlike regular red radish, watermelon radish has a milder pepper flavor but dont be fooled by its greenish white skin because it hides its rich, stunning pink interior.This radish is usually available year-round but most supermarkets will have it during the summer and early fall. In this recipe, I use raw watermelon radish but cooking it enhances the flavor to an almost sweet bite.
INGREDIENTS
1-2 watermelon radish, thinly sliced
1/4 cup mint, chopped
Arugula
juice of 2 lemons
olive oil
1 large cucumber
1 red onion
2 cups of crimson red watermelon
Salt and pepper, to taste.
Directions
Use a mandoline or a sharp knife to slice very thin slices of the watermelon radishes and cucumber.
Mix in the lemon juice, salt, pepper and olive oil. Whisk.
In a bowl, mix in all the ingredients together and serve.
Pro tip: this salad just like revenge is best serve cold.
