Vegan Cielito Lindo
Ingredients
1 cup of vegan cream cheese
1 cup of vegan sour cream (blend 1/2 cup walnuts or cashews, juice of 1 lemon, 1/4 tsp mustard, 1/4 salt, 1/2 cup water and 1 tsp APV)
2 tomatoes, chopped
1/2 head of lettuce, finely chopped
1/2 refried beans (make sure theyre vegan)
2 avocado, mashed into guac
1 cup of salsa
vegan cheese, to sprinkle on top
Directions
In a tray, layer the ingredients in this order: cream cheese, refried beans, sour cream, guac, salsa, lettuce, tomato and sprinkle cheese on top
Serve with chips or your favorite crackers.
Pro-tip: you can eat this dip cold or you can warm the dip in the oven.
