Vegan Coconut Banana Bread

Ingredients

  • 3 medium ripe bananas

  • ½ tsp vanilla extract

  • 1 cup brown sugar

  • juice of one lemon

  • 1 cup plant-based milk (I like coconut milk)

  • 1 ½ cup coconut flour

  • 1 cup flour of choice

  • 2 flax eggs (2 tbsp ground flax + 4 tbs water)

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp sea salt

  • 1/2 cup of coconut oil

  • 1 tbsp cinnamon

Directions

  1. Preheat the oven to 350°F.

  2. In a large bowl, mix in all the dry ingredients.

  3. Mix lemon juice and plant based milk, let sit to “curdle”. That will be our vegan buttermilk.

  4. Mix in all the wet ingredients in with the mashed bananas.

  5. Slowly stir in the dry ingredients into the wet ingredients bowl. Make sure to mix until there are no lumps in the batter.

  6. Oil the loaf pan, pour in the batter and make sure it spreads evenly. For this recipe, I like to top my banana bread with walnuts or cashews before baking.

  7. Bake your banana bread for aprox. 35-40 minutes or until it GOLDEN & FIRM.

  8. Once ready, fight the urge to eat it immediately and let it cool for 20 minutes.

Protip: When making flax eggs, mix the water + ground flax seed and let sit for aprox. 10 minutes. It should have a paste, egg like consistency. this will help keep your bread not crumble and keeps it moist.
